Ingredients of Kenyan Mandazi
- It's 1 1/2 cup of cake flour.
- It's 1/4 tsp of salt.
- It's 1/2 tsp of baking powder.
- It's 1/2 tsp of nutmeg.
- Prepare 1 1/2 Tbsp of butter.
- Prepare 1 Tbsp of sugar.
- Prepare 1 of large egg.
- You need 1/2 tsp of vanilla extract.
- Prepare 1/4 cup of buttermilk.
Kenyan Mandazi instructions
- Sift together flour, salt, baking powder and nutmeg. Give a one final whisk and set aside.
- In another bowl using a wooden spoon, lightly beat together butter and sugar until combined. Beat in the egg and vanilla until fully incorporated and lastly stir in the buttermilk.
- Mix the dry mixture into the wet mixture and bring the dough together by lightly kneading it on a floured surface. If too wet, add more flour as needed (sometimes you'll need a lot more flour than you anticipated - that should not alarm you). Cover dough and let rest for 30 minutes.
- Once rested, flour your counter top and roll the dough flat but not too thin. Using a pizza cutter cut it into squares as seen in the image.
- Heat enough oil for deep frying oil on medium heat until the tip of a wooden spoon sizzles when dipped into it. Deep fry the dough squares for 3 minutes of each side or until golden brown. Drain and cool on a paper towel.
- Enjoy with a cup of spiced tea! Other servings suggestions include: sprinkled of sugar; hot and dipped in golden syrup; glazed with white or dark chocolate ganache; or served with a honey dip.
