Ingredients of Soft Mandazi

  1. You need 2 1/2 cups of all-purpose wheat Flour.
  2. You need 1 1/2 tbsp of baking powder.
  3. You need 1 of egg.
  4. Prepare of Small packet of milk.
  5. Prepare 4 tbsp of sugar.
  6. Prepare 1 tsp of iliki/ Cardamom.
  7. It's 1 tbsp of margarine.
  8. Prepare of Lemon zest.

Soft Mandazi step by step

  1. Mix the flour, baking powder, Cardamom, Margarine, lemon zest and sugar in a suitable bowl..
  2. In a separate bowl whisk the egg into the milk..
  3. Make a well at the centre of the flour and add the milk and egg mixture and slowly mix to form a dough..
  4. Put the dough in a nylon paper and cover well, then  allow to rest for 30 minutes up to 1hour..(the longer it rests the softer it gets).
  5. Roll the dough on into a 1cm thick piece..
  6. Using a sharp knife, cut the dough into the desired size setting aside ready for deep frying..
  7. Serve them warm or cold.
