- Gently add some warm water and mix with fork as you dissolve the sugar.
- Once the dough has loosely come together,start to knead with your hands for 10 or more minutes to make the dough soft and elastic.
- Once the dough is soft and semi stretchy,let your dough rest.place it in a bowl greased with very little oil so that the dough doesn't stick. Let it rest for 10 mins.
- Divide the dough into balls as this depends on the size of mandazi you want.
- Dust the working surface with flour and roll out and cut into whatever shape you fancy.I cut mine into circular shapes by rolling the dough into a circle and cut it with plastic cup to give me a circular shapes.
- Deep fry in hot oil until golden brown on all sides.
- Drain and serve warm.
